The Baobab tree (Adansonia digitata) is probably the most characteristic tree of Africa. Local people have used the fruit pulp for domestic purposes, raw as a snack or mixed with other foods as a flavoring. It also makes popular soft drinks or tea throughout the Sahel zone. Over the last years, there has been an increasing international interest for Baobab products because of its many different qualities and applications. Baobab fruit pulp has a high natural Vitamin C content, it has strong antioxidant properties, is a natural source of minerals (calcium, phosphorus, iron and potassium), and it contains Vitamin B2 and B3. In addition, it is a binding and thickening agent.
